How to adjust milk
When adjusting milk in recipes or for different purposes, there are several ways to modify it.
There are some common methods:
1. To make whole milk from skim milk:
- Add 1–2 tablespoons of heavy cream per cup of skim milk.
2. To make a buttermilk substitute:
- Add 1 tablespoon of lemon juice or white vinegar to 1 cup of milk
- Let stand for 5–10 minutes until it curdles
3. To reduce fat content:
- Mix whole milk with skim milk
- Gradually transition to lower-fat alternatives
4. To make milk alternatives:
- Use plant-based options like almond, soy, or oat milk
- Adjust liquid ratios in recipes accordingly
5. For baking adjustments:
- Add dry milk powder to increase richness
- Use evaporated milk for more concentrated flavor
- Substitute with yogurt or sour cream for tang
6. Temperature adjustments:
- Warm milk to room temperature for baking
- Scald milk when recipe requires
- Cool completely before using in certain recipes
